The Torréfaction Noailles franchise is a market that relies on a network of partners.
All of our coffees are first carefully selected on the best plantations in their raw state : Green coffee beans.
Our partners are producers from many countries around the world: Mexico, Brazil, Costa Rica, Guatemala, Colombia, Kenya, Cameroon, Ethiopia and Vietnam.
A harvest represents on average 214 lb of cherries a day that is 26 lb of roasted coffee.
We need nearly 4.5 lb of cherries to get 0.5 lb of roasted coffee.
The Arabica coffee tree cherries need 6 to 8 months to ripen, against 8 to 12 months for Robusta coffee tree cherries.

Robusta and Arabica, two different botanical species, one for intensity and strong flavors, the other for softness and fruity flavors…...
Our coffee roasting is slow and progressive, only the master roaster’s traditional know-how guarantees the right state of the coffee beans.
A traditional roasting lasts about 20 mn during which the precious beans are processed at 200 degrees.
With slow roasting, the coffee bitterness increases tenfold and its acidity disappears.Italian roasting is longer than our French style which produces a more balanced, less bitter coffee…
Perfectly roasted, coffee beans, in their “monk’s robe” color and still crackling with heat, are poured into a cooling tub in which they are mixed and ventilated without any addition of water.
After a few days’ rest, our coffee is available in our shops.
